Can the 10 main playback handles on Eos be configured to operate as anything other than playbacks? i.e. has inhibitives or submasters? Or do you need a separate sub wing to do this?

Absolutely! The faders can be assigned and configured under the Fader Configuration menu in Setup.
Content can also be loaded live to an "unconfigured" or empty fader.
Record Sub 1 Enter Load (where load represents the location you'd like the sub to land).
Sub 1 thru 10 Enter Load (where load represents the location you'd like sub 1 to land. Subs 2 thru 10 are sequentially loaded).
